He’s great to listen to but I’d say he knows western food history. The way he talks about Islamic cuisine in completely orientalist terms and doesn’t even know how to use the terms Islam is the religion not a place, the countries are varied with their own cultural history. Also his comments on Africa are completely backwards. He even admits that his source is a food historian who has come under attack for what he says. Africa is varied like “Islam†the place he keeps referring to — to ignore medieval history of the East African empire of Abyssinia, of the Mali empire and to call it all Africa meaning tribal societies who have no cities or architecture or history etc. it’s hard not to be offended. Why not just stick to the countries he knows? Rather than risk generalist and orientalist statements about these parts of the world? Too bad he’s so easy and likable to listen to — alas fails as a historian.
I have already recommended this DVD and book set informally, and am finally compelled to make it official. Professor Albala is a terrific communicator to general audiences. That's a rare and valuable trait in an academic. That Albala is so respected in his field (see his other books and accolades, folks!) makes this all the more impressive. His enthusiasm for culinary history is obvious here, not to mention contagious. And I am learning so much! Good thing I can watch the DVDs again, because the content is so rich I need to rewatch to remember it all! I appreciate Albala's willingness to qualify his generalizations, too, letting me know there is more to the story than he has time to point out in a survey of such ambitious (global) scope. All-around A+.
Detailed but incredibly interesting history of primarily European food but with some jaunts elsewhere in the world. I'd recommend this series of lectures for any history buff or foodie!
I have now listened to the Audible version of Food: A Cultural, Culinary History twice! I particularly enjoy the way Dr. Albala uses food and culinary tradition as the lens to bring the broad arc of human history into focus. He is fine storyteller and delivers compact little vignettes from around the world to illustrate how we humans can perhaps best be understood by what we had for dinner! I also recently read Michael Pollen's "Cooked" - which explores some common threads in the food/cooking narrative - a recommended companion. This Great Course is highly recommended - listen to it on your next road trip, or maybe in the kitchen while you prepare a great stew!
Of i could the stars would be negative three as the purchase thru the Audible tab on my fire did not give the digital book to read along with the course.
I listened to all the lectures in several days. Easily the most interesting course I have taken. I highly recommend this to everyone, as the information is vital for an appreciation of food, and therefore health.
So far it has been a really interesting BoA. I love food history. I am very interested in how a food migrates from it original area to become something found all around the World.
Sometimes people shouldn't narrate their own work. They should hire professionals to read for them. This guy has a lisp, and although it sounds "insensitive" to mention it, I wasn't able to listen to this for more than a minute or two before just stopping it altogether. Professional audio recording techniques allow for lisp removal (it's done all the time in the movies). That would be a second solution for this un-listenable recording.
